When you want to prepare a delicious meal in a short time, dry pasta is undoubtedly among your first options. Try this Mexican spaghetti recipe for a different alternative to prepare pasta.
Your guests will be delighted and you will not need a large budget to buy the ingredients, it is likely that you already have some of them at home.
Ingredients:
450 gr of spaghetti (dry pasta)
1/2 cup onion, minced
2 teaspoons olive oil
1 clove garlic, minced
1 cup of sauteed tomatoes
2 cups of canned tomato sauce
1 avocado, peeled, pitted, and finely chopped
Salt and pepper to taste
Preparation:
In a large pot, heat salted water to a boil. Then add the spaghetti and stir to avoid sticking. Cook for about 10 minutes over medium heat.
Meanwhile, cook the onion with the olive oil in a pan for about 2 minutes, until it softens. Then add the garlic and cook for another 30 seconds.
Add the sauteed tomatoes, the canned crushed tomato, and salt and pepper to taste. Cook over a fire for about 8 minutes.
When the pasta is done, drain it in a colander. Next, spoon the sauce into a large bowl with half of the pasta and stir to mix well.
Then add the remaining pasta and cover with the rest of the sauce. Stir again to combine well. Lastly, pour the chopped avocado on top.
To accompany, you can prepare the salad that you like the most. One option is a romaine lettuce salad.
You just have to cut some new leaves from the lettuce and prepare a dressing of white wine vinegar, fresh lemon juice, mustard, olive oil, salt, and pepper.
Next, place the lettuce leaves in a large bowl, pour in the dressing, and add a little chopped parsley. Stir the salad to mix the ingredients well and you’re done.
