Process:

Before you start rolling out your machine for making perfect pasta, you need to make pasta dough to get the process done. However, you can easily prepare the all-time classic pasta dough with a little effort and I will show you how to make homemade pasta with machine easily in a short time.

Basic Pasta Dough:

Ingredients:

We will prepare 2 pounds dough for about 20 servings

  • ¼ cup fresh extra virgin olive oil.
  • 4 cups of all-purpose flour (unbleached).
  • 1½ teaspoons salt.
  • 1 cup of water.

We can use an automatic bread maker to mix our dough. First, we have to check that the bread pan is fitted with the kneading paddle. After that, we will put the water into it and add rest of the ingredients. You have to select pasta dough program from the menu button. Continue the process by pressing on/off for few minutes until the whole dough mix well and you can knead if stuck in the pan.

When your dough is mixing in the pan, make sure scrape all the sides of the pan to get all inside for a smooth mix. After 5five minutes check if all the ingredients fully mix and take out the dough from the pan. Sprinkle some flour over the surface and let the dough to rest for 30 minutes.

Next

After 30 minutes we will take out the dough and start kneading it for few times and if need pour some flours and knead again until you get the consistency you want.

Finally, we have our pasta ready to go through a Hand-roll or an automatic pasta roller machine. Cut the dough into four portions for easy rolling.

We will use a pasta maker attachment on a stand mixer to make our pasta. To use the pasta machine we have to take one portion of the fresh dough and feed that through the roller. Make sure set the machine at the minimum setting. Cover rest of the dough with something like a wet towel for later use.  When dough came out as a sheet fold it from the half and put it through again in the roller.  You have to repeat that whole process for about ten times. After that, you have to gradually feed the sheet to the higher setting. That’s mean you can start with number 2 setting and make your way to the narrowest setting.

You don’t need to fold the dough this time. Then, cut your dough into your desired shape using the cutting attachment on your machine. Repeat this process for the three remaining dough portions.
