Five min pasta
Five min pasta – What’s better than a fresh pasta before a long monopoly match up? With the fresh pasta in your belly your mind will be ready to compete on the highest level of monopoly. My girlfriend and I been invited to play a monopoly with friends, kind of like in the last min setup, I suggested obviously that we’ll make some fresh pasta to eat before the game, the first respond was something like ‘wouldn’t it be too much work?’, so I said no, actually I can’t think of more simple dish to make that would take less work than this fresh pasta, here is how the recipe goes my 5 min pasta recipe, I hope you’ll find it fun and practical for your game night as well or any other occasion where you are looking for a fun and fancy five min dinner snack, it all goes back to the magic of having access to Raffetto’s Fresh pasta or following one of the previous fresh pasta recipes in advance.
- 1lb Fresh pasta (if you live in NY you can get it for less than $4 at Raffeto on Houston)
- 4 Garlic cloves (Sliced)
- 2 tablespoons Pine Nutes (Lightly toasted)
- 2 tablespoons Butter
- Basil (Dried and chopped)
- Truffle Oil (You can also get that one at Raffeto on Houston)
- 1 Tomato (Finely chopped)
- 1 Shallot (Finely chopped)
Two great addition to make this 5 min pasta even better are capers and anchovies, simply add them to the cooking right after the garlic. a nice cheese to garnish this pasta will be a mix of pecorino and asiago cheese.
|Boil the water for your pasta in a large pasta pot. if you don’t have one, you’ll have to do your pasta in smaller batches.
|In a separate pan start to saute the garlic seeing that its not getting burn. (you can add a bit of water to the pan if you feel like you need to get the situation under control), add half of the butter and let it melt with the garlic.
|Add the shallots and let cook for a few min and follow by the tomatoes and half of the toasted pinenuts
|At this point when your sauce is almost ready, place the pasta in the pasta pot uncovered and cook for 3 min
|Fish the pasta into the sauce pan, add the rest of the butter mix and let cook for a min or so
|Plate and garnish with the remain pine nuts, basil and truffle oil
